Kosher Baking & Pastry Arts

Rockland Community College is starting a new Kosher Baking Program and will be offering classes in our state-of-the art kitchen right on the Suffern Campus.

Summer Session

Kosher Breadmaking, Rolls and Pastry Class

Through hands-on learning, students will prepare various kosher breads, rolls and pastries using classic and modern techniques. Students will understand baking technology including learning the different types of flours, sugars, and yeasts and how the interaction of these ingredients affects the outcome of leavened and unleavened products. The preparation of brioches, breakfast pastries and holiday breads will be included.

The class will be taught by Lioudmila Voltchok, a Baking Instructor with over 20 years of professional experience, and overseen by a Professor/Director in a Certified Kosher Kitchen under Rabbinical Supervision.

No experience is necessary.

Fall Semester

Calculations for Culinary Arts

An overview of food cost calculation, units of measure, portion control, selling price, and yield percentage will be covered. This course will develop the mathematical skills necessary for working in the culinary and hospitality field.

Kosher Baking I

An introduction to Kosher baking, tools and techniques. Students will learn the principles and practices of Kosher baking and will create various Kosher baked goods. Proper sanitation and use of bakery and kitchen equipment will be taught.
