HOS 255 Food and Drink in the British Tradition

 

This seminar introduces students to the traditions of British food and drink including such topics as food staples, beverages including tea, beer, stout and wine, pub catering and the availability of a wide array of international foods. The course will acquaint the student with the large number of foreign cuisines now part of the traditional English cookery. Students will participate in hands on culinary instruction, utilizing various ingredients and methods used in traditional British cuisine. The seminar will rely heavily on industrial visits including pubs, breweries, hotels, wine merchants, food markets and courts with lectures highlighting the importance of each.
